Bemidji Brewing Co. now has their federal brewing notice, which allows them to work through the state portion of licensing. If all goes as planned, they’ll be brewing sooner than later at the kitchens of Harmony Food Co-Op in Bemidji. We’re wrapping up our own interview in the next week or two, but for not check out a quick story from Lakeland news.

In this Northern Brewer video, Palmer discusses his techniques for adding salts to brew water, mashing, batch sparging (versus fly sparging), chilling and fermentation.
